Hmm interesting, after reading your email, I played around with settings, and did this
mvn package -Dfile=zeppelin-interpreter-0.6.0-incubating-SNAPSHOT.jar This allowed me to rebuild (over and over again) without building all of Zeppelin. Thanks for the tip!
