There are a few ways that I know of to utilize a second monitor, but all of
them will require some extra hardware.

1) Multihead X - This requires support in the video cards, I believe. 
Many newer graphics cards do support it.  There's also a Matrox card, IIRC, that
has two VGA ports and handles multihead stuff itself.

2) VGA + Hercules - From what I've gathered, any VGA card will coexist on a PC
with a Hercules graphics card (really ancient stuff).  Linux will somehow
support this, but I've never tried it or seen it myself.

3) Dumb Terminal - This requires a cheap computer that's not good for much
else.  You plug your monitor and keyboard into it and network it (by ethernet,
serial, or parallel port) to the server.  If the terminal box is hefty enough
and you have ethernet, you could use it as an X terminal.

I think option 3 is the only one that allows the other screen to be controlled
by separate input devices.  Hope this was helpful to you.
