Don't know what exactly it is I like about it (could be as shallow as just liking the default look) but I'm a fan of 'Tavi <http://tavi.sf.net>. It was extremely easy to set up and as easy as any wiki to use. It's PHP/MySQL. If you're a PHP hacker 'Tavi would be a good choice. The code base should be easy enough to customize to any future needs.
