There's a very slick way to make efficient daily snapshots of your data that I plan to implement on my own systems someday. The article is here <http://www.mikerubel.org/computers/rsync_snapshots/>. It doesn't solve all your troubles, but it's so very slick.

You should also look into Amanda <http://www.amanda.org/>.

Let me warn you first, though: There's no point having a backup plan if you don't also have a restore plan. Make one and test it. Be sure you can get your data back out in a reasonable amount of time.
