Not true. I'm in Thunderbird right now (0.7.1, build 20040626) and it's
definitely possible.

Tools | Account Settings
~  Outgoing Server (SMTP)
~    "Advanced..."
~      "Add...", fill in the information.
~  [EMAIL PROTECTED] | Server Settings
~    "Advanced..."
~      SMTP tab, select SMTP server from drop down.

I know Outlook does per account SMTP as well (in a more user intuitive
but less flexible way). Most other major email clients (including mutt)
are probably also capable.
