You want at least 350 mHz.  Also, pick a model that has a USB port. 
Only G3's with USB can even think about running OS X Panther (panther
cannot be installed on a machine without usb).  We currently have an
older g3 400 mHz iMac in my office that has USB and firewire.  After
boosting the RAM to 512 mb, it runs Panther *very* well.  Much better
than XP runs on a similarly configured Pentium II/450.

bear in mind that you'll probably have to pay for OS X, since most of
the surplus macs get shipped out with only OS X 10.1 or 10.2.

Linux would run wonderfully on the G3 for less cost.  :)
