Gstreamer fires signals in a different thread than the gui mainloop. Use
something like
Idle.add (() => { this.image_button.set_from_stock(
Gtk.Stock.MEDIA_PLAY, Gtk.IconSize.BUTTON);
return false; });
to run your code in the gui mainloop.
