Thanks, just figured that out after sending that. I keep looking at
the website docs, which don't help.
On a related note you have to also have unique -n instances when doing
this (the varnishd told me so).
So this is what I now have in /etc/default/varnish:
DAEMON_OPTS="-a 0.0.0.0:8080,0.0.0.0:9010 \
-T localhost:2000 \
-f /etc/varnish/default.vcl \
-n $INSTANCE1 \
-n $INSTANCE2"
