Sorry, this is a documentation bug (it shouldn't be mentioned anywhere, but I know it is in the VBoxManage chapter). It will (hopefully) be available sometime in the future, but it's not part of any VirtualBox 6.1 release.
The "VBoxManage modifyvm" help output doesn't show it.
