You can, and it works without problems.  I use a VM that has no
virtual hard drive configured (but it does have a virtual SATA
controller) to test the live distros I develop, and haven't run into
any problems with it.

You could, but in such circumstances you'd probably be better off
installing the live distro to a drive image.  Or, you could use scp or
sftp to copy files into and out of the running live distro over a
host-only adapter while it's running and skip the shared folder.
