Ah, so its set to default - well lets change the amount of jobs Activity Monitor keeps :-)
Run <netbackup install path>\bin\admincmd\bpgetconfig on the Master Server and look for KEEP_JOBS_SUCCESSFUL_HOURS  and KEEP_JOBS_HOURS. If it is set to three days, this is what you see. 

KEEP_JOBS_SUCCESSFUL_HOURS = 72
KEEP_JOBS_HOURS = 72
 
If you want to set it to, say five days. Do the following.
 
echo KEEP_JOBS_SUCCESSFUL_HOURS = 120 | bpsetconfig
echo KEEP_JOBS_HOURS = 120 | bpsetconfig
 
Now if you re-run bpgetconfig and check the ouput it should have changed. This should work for your environemnt :-)

I usually do
option 2 : Re-run your existing policy, and simply kill off the streams you do not need - Was wondering if there was any other way other than that - Will try your option 1
 
And about the how long a stream takes - I keep all the job details in the job DB for only 3 days - If I need to find out how long it takes to run a backup which was done 1 week back after 4 days - I can't see it on activity monitor as it gets cleaned up every 3 days. For example
We have Full's running during weekends and Incr's during weekdays  - Say I need to find out the time it takes to backup a FULL backup on a Thursday (which was done 4 days back) - Its no more in the activity monitor

In regards to re-starting one stream, what I either do is:
 
1) Create a new Policy with all the same settings as my existing policy and configure for the 1 stream that failed
2) Re-run your existing policy, and simply kill off the streams you do not need.
 
In regards to how long a stream takes, doesnt Activity Monitor show you this when you double click on a job?

Environment - NB 5.1 MP 3 running on Hp -UX

Is there a possibility to check the backup time of a specific stream
within a policy.  For each drive we specify a new stream. Is it possible to get information
about the start/end time and amount of data of each stream?
Are there any commands I can use in scripts to retrieve performance
data?
 
And also is there a way to manually restart one particular stream without restarting all streams - In detail, Sometimes I see that one particular stream would fail ( due to media issue or something else) and rest of the backup streams for the same client run successfully. Next day morning when I come in, I just want to start the failed stream without restarting all streams for that particular client.

Any help is appreciated!!
