The easiest way to do this is with the Create dataset feature which
allows you to derive one dataset from another, including slicing a
dataset into segments. I've attached your example .vsz file with a
couple of dataset slices named LeistungJanuary, LeistungszeitJanuary,
LeistungFebruary, and LeistungszeitFebruary which use slicing to extract
the January 2011 and February 2011 portions of the dataset (I think -
the ranges might not be precise but you'll get the general idea from the
expression). I've then used those derived datasets in the January 2011
and February 2011 charts.

Unfortunately I don't know of a way of easily determining the specific
numeric ranges to use (in this case I just opened the CSV and figured
out each day has 96 readings and calculated the ranges accordingly).
There might be some function that can be used for that - but if not you
could add one via the Edit / Custom definitions... menu item. Custom
functions added there can be used in the definition of new datasets.

As for generating multiple similar plots, the Tools / Widgets / Clone
for datasets... menu option may prove useful but it's not something I've
used personally so I'm not sure.

Select the y-axis of the graph in question and do one of two things:
manually increase the "Max" property (defaults to "Auto" but you could
enter, for example, 250). Alternatively, if you want to do the same
thing graphically you can drag the second black square at the top of the
axis on the display (that's the one that sits to the right of the first
black square which is actually on the axis line). Drag it upwards to
increase the maximum and you should see the graph line squish down a bit.
