Questions for all:

1. For saltwater bait fish patterns, what is your one favourite material to
use? For example DNA and so forth.
   I'm lazy.  I don't like to spend a lot of time trimming a bait fish pattern to shape.  I started with Polar Fiber and still use it occasionally, but it limits the size of the fly to about 4 inches.  It's advantage to me was the fact that it tapered and took permanent markers, which means all I have to do is buy white.  The disadvantage is it's so fine that you can't blend the flash material and it creates an opaque fly.
  I have a good collection of Ultra/Unique hair that I use mainly for Surf Candies. It's got some good colors especially for silversides and bay anchovies.  The disadvantage is I often have to trim it, but by blending it with Sparkle Flash or similar product I can produce a taper that needs minimal trimming.
 My second favorite material is Fuzzy Fiber.  Creates a nice translucent fly, tapers nicely without need to trim.  It's a wavy material and blends nicely with Sparkle Flash. It works nicely for large flies 10 to 12 inches, but also for smaller flies in the 4 inch range
My number one material is Mirror Image.  It's a very fine material, translucent, you can create large flies without a lot bulk.  After I blend it with Angel Hair It has a nice taper. With the material I can tie flies from an inch and a half up to 11 inches.
 

2. If you had only half a dozen colours to choose from to cover the main
baitfish (such as mullet, pilchards, etc), what would they be??
  Color in () is the permanent marker color
  Light Green (Sea Foam, Celadon Green)
  Light Blue (Light Cerulean Blue),
  Light Purple (Violet Mist, Cornflower)
  Bronze/Olive,
  Warm Gray (60%)
  And I'd get booted out of the club, if I didn't say Chartreuse.
  A bit of pink on the sides doesn't hurt.  All this would be over a white.  I need to
  blend different colors of, in this case Mirror Image, along with the Angel Hair to get some of
  the colors. 
 

3. Do you tend to mix different fibres together of stick to the one type for
your baity patterns?
   As I've said I blend all my materials with flash before tying, no more alternating layers of hair and flash.
   So I do mix different materials.
 Here's a couple of bunker patterns. They should be tied with Mirror Image, though there might be one with Fuzzy Fiber.  Change the back color and they can be any wide body bait fish
 
Here's a couple of silverside patterns, tied with Mirror Image.  Change the back color and they can be any number of narrow profile bait fish
