Okay, so I found the 'v4lctl setinput' command.  However, I tried:

v4lctl setinput Composite1; mp1e -vv -c /dev/v4l/video0 > file.mpeg

but it still only recorded the CATV channel.  Event removing the CATV input 
does not do the trick.

Any other ideas greatly appreciated.
