A great affordable option is a Beachtek box. It lets you plug an XLR cable into any camera that has a 1/8" mic jack, and has several noise reduction thing-a-ma-things to help prevent noise that can be introduced into the system by the camera itself. (Read Jay Rose's book on Production Audio for details.) By using this device, you don't need a mixer. They've got two channels -- for two mikes, which lets you send one mike to the left channel and the other to the right. And you get a gain a control for each channel.

There are different Beachtek boxes for different cameras, or you can get one a general one.

I've tried an XLR-to-1/8" cable on multiple occasions and have always HATED the results. Get the beachtek!
