I believe you're supposed to change these default mappings in your .vimrc file, but unfortunately your changes will get lost as soon as you change colorscheme or change the 'background' setting, and maybe under some other circumstances as well, so .vimrc actually doesn't work so well for customizing colors. I've made a small plugin which lets me use 'after/colors/' scripts in the same way I would have '/after/syntax/' scripts, and I find this system works very well for customizing colorschemes (individually or all at once).
