You should have set configure parameters, then run "make" before "make 
install".

About why gvim version is different, what is the answer to the following 
(at a shell prompt):

        ls -l `which vim` `which gvim`

?

For Vim 7.2a, the archives are (as you found) under 
http://ftp.vim.org/pub/vim/unstable/ etc., and the patches (5 already 
AFAIK) are under http://pub/vim/unstable/patches/7.2a/ (also by ftp).
