You can override specific menu entries.
For what to override, see
:vmenu PopUp
:split +/PopUp/ $VIMRUNTIME/menu.vim
For example, original:
:vnoremenu 1.30 PopUp.&Copy "+y
modified (see vimrc below) (do not modify in-place):
:vnoremenu PopUp.&Copy "+ygv
