I know it's not the best use, but it could be a terminal for a linux/unix server if you have one. For that matter, connect it to an AS400 if you have one of those. Or, just anything that requires a dumb terminal.
Another option is to use it as it was intended. I'm the network admin at my site for the company I work for. We had until this year began a man that had been there for years who only used an IBM-XT (8088 processor with dos 3.3). I know that it isn't exactly mac related, but it shows that the machine was still being used. I have the invoice (which he had) now showing the machine bought in 1982. He had a modern day Dell Optiplex 745. He used the boxes to prop his old monitor on. Upper management took the unopened Dell when he retired and re-issued it to someone else. But, he used "junk" for over 25 years and it did everything he wanted. BTW, he was able to avoid email altogether this way too.
