I've been on ebay looking for external ethernet adapters, and I can't find anything that looks like it will attach to a serial or SCSI port of a classic mac. The only devices I've found have the AAUI connector that looks like a strange 9 pin serial port:

So do SCSI or serial to ethernet dongles exist?

Not as a "dongle" as such. Devices that give ethernet out of either serial or SCSI are a bit more complex and those I have seen all have some source of external power. The ones I have for the SCSI ports of PB1XX machines have a separate lead that takes power from the ADB port.
