So do SCSI or serial to ethernet dongles exist?

Not as a "dongle" as such. Devices that give ethernet out of either
serial or SCSI are a bit more complex and those I have seen all have
some source of external power. The ones I have for the SCSI ports of
PB1XX machines have a separate lead that takes power from the ADB port.
