Another of the biggest issues with UNIX on a Mac is actually Apple's ROMs, they 
really get in the way very badly on all types of UNIX I've tried on a Mac 
(apart from OS X and A/UX that is). All mac 68k open source UNIXs use a booter 
than actively has to quit Mac OS and boot the UNIX Kernel from there. Later 
PowerMacs with OpenFirmware require a booter to be loaded in pre-OS from a 
special hard disk partition. It's pretty icky either way.

Dunno if you've covered this already (using webmail so I can't see the rest of 
the thread!) but if you want a well developed, flexible and well supported UNIX 
for 68k Macs then try NetBSB-mac68k.

Everything you need is there and the official mailing list is pretty active and 
very helpful.
