Bob, sounds like you've got quite a vehicle. Have you towed your a/s with it
yet? Try it on an uncrowded highway (if that's possible in So. Cal) before
heading for the mountains, see if it has the  power/stability/cooling capacity.
My hitch guy had me take my a/s out on the highway and do some high speed lane
changes (alone) to test stabilty. If this gets scarey, relook at your hitch
setup.
