Two possibilities spring to mind. One is that there is a Home field below all the phone numbers, and that does say email. I think there's one for work and/or main.
Otherwise, if you have an email from the person, I think you can add to contacts, to an existing contact, then it will put the email address in somewhere. when you come to use a contact, and especially if there's more than one phone number or contact detail, it will open up that contact for you to select which field you intend to use as address. A warning though, I have noticed it will show the user or contact by name, then when you click Send, it might find and use what it thinks as a more appropriate field to use and send to that. I hate this kind of presumption, but common if you got the recipient listedin your iMessage list.
