I believe there's an update for iOS after 8.1.1 (8.1.3 is coming to mind, but 
maybe I'm wrong). I'd install that first, just in case.

I'd also suggest that it might be the way you're doing the gesture. I'm not 
slamming you in any way - I've used iOS for over four years, and I *still* 
can't reliably select or un-select. Sometimes it doesn't work, sometimes it 
works perfectly, sometimes it selects way more than I wanted. I've emailed 
Apple Accessibility to ask if they would consider changing from a pinch gesture 
to a two-finger swipe left/right, as that would be much more reliable and easy 
to perform.

Anyway, keep at it, and install that update. Sorry I can't offer anything more 
helpful.
