I highly doubt it’s your carrier. Koodo is on the Telus infrastructure, I was with them for almost 3 years before switching back to Telus recently and never had a problem.
Did you try using a wired headset and did you do several calls with it to see if that makes a difference? Despite what Apple did over the phone, if this is an easily reproduceable problem, just take your phone to an Apple store and ask them to make some calls so they can see for themselves.
