Hi Keith, iTunes always overwrites the last backup, if you go to Preferences and Devices you typically see only one backup there unless you have multiple devices or do a backup before an upgrade in which case you may see two backups labelled with date/time. If you do normal backups whether encrypted or not, iTunes will overwrite what you backed up before and replace it with whatever is on your phone at the time.
