If you have to turn off Voice over to stop the double letters, how in the heck do you know what you are typing?

However, I just began using a Logitec K760 Solar BT keyboard. When I very first paired it with the ITouch it worked beautifully. Then I did some app updates, etc. and when I tried using the keyboard again, it typed every letter twice. do you have to turn the device off and back on to get it to stop this behavior? By device I mean the ITouch rather than the keyboard itself. I then tried it on the IPhone 6 with the result of the double letters? I am totally confused.
