I wonder what the difference is between the previous router and a normal
wifi router? I suppose TMobile's has some kind of quality of service built
in to prioritize your connection for calls to go through, where most of the
modem/gateways I've had only do that by device or wired port.

You can lock down the service to your own phones if you want or leave it
open for anyone to use. There’s no risk in leaving it open other than
using bandwidth which depends on how much bandwidth you have total
whether you care or not. If you lock the device down then it will only
work on your phones.
