Typically I might record a 15 minute radio clip I want to share with someone or a doctor's consult that might last 45 minutes. You could test whether or not it would work if you went to the record button and didn't do anything, then turned speech off then did a single finger double tap to see if it would start recording. If someone sighted were there they could verify if that worked or not. If it worked then I think the next single finger double tap would be the stop button. After that you could turn speech back on.
