It is unlikely that it will change languages for one single word. I think there must be some coding involved so it detects that there is another language in the heading or something. This is a case where you really ought to call Apple and find out exactly how it detects that another language is present and will therefore switch automatically.
But, others are right in poiting out that if your device isn't set to the default language, it won't switch automatically. That is the one advantage to human read books, they can pronounce individual words in something close to the correct language. If someone knows for sure, they haven't written in response to your question. If you do call Apple, please share the results. I am one of those people who only speaks English, sad to say, so I'm not motivated to call Apple and research it further.
