Go to Settings > Phone and I think you want to look for something that says “Other Devices”. Here any other iOS devices that use your Apple Id will be listed and you can turn off the feature where you can pick up calls on those devices.

Typically pressing trhe volume up or down button will silence the ringer, but not pick up the call. Anyhow, go to Settings > Sounds and find the ringer volume. You can flick up all the way to 100% to make it as loud as possible. Also make sure you flick past the volume to the button “Change with buttons” and turn it off. If this in on it means you can change the ringer volume with the volume buttons and you may accidently lower it. If you turn off the button “change with buttons” and set it to 100% in Settings it will stay there.
