All of the words in that lesson are acronyms. To fully capitalize a group of letters, swipe right then third finger, swipe right then third finger, then type the letters for the word.
There is the option in the app to edit a course. I'm assuming from the reqlly quick read of the instructions that you can customize the lessons e.g., add or take away. What you're asked to type in the tutorial is shown, so you can read through and see what you're being asked to type. This came in handy for the "bad bee" example, and the sentences lesson.
