Preview is what a sighted person would see next to each message in their list of emails, such as your in box. With VoiceOver, you'll hear the preview read after a slight pause, if you have hints turned on in VoiceOver. This way you can hear a bit of the message and determine if you want to read it, move it to a folder or delete it without actually opening it up.

To pull up a link, you should just be able to double tap on the link.

I have the rotor set to characters which suits me as I use that setting to 
check clues in Word
Ladder, so do I have to reset it from characters to sentences when I read an 
email and then reset it
to characters when I play WL?

Just as a small correction, it is actually not "the third line". Yes, you have 
to swipe twice from
the Cancel button to get to Send, but visually Cancel, the email subject and 
Send are all on the
same line.

When you have composed an email in the Mail app or are replying to one, the 
Send button is more or
less at the top right corner. Cancel is at the top left and in the middle is a 
heading which when
you compose a new message says "New Message" at first, as soon as you typed a 
subject it will say
whatever it is you typed as the subject or whatever the subject is of the email 
you are replying to.
I say the send button is "more or less" at the top right corner because just a 
tiny bit above it and
all the way across the device from left to right is a button that is announced as 
"Minimize Draft".
If you started a message and want to finish it later, you can double tap it and 
it will save the
message as a draft and go back to the main mailbox you were in.
So, visually you have your status bar at the top with the time, battery level 
on the right and so
on.
Underneath and all the way across is the "Minimize Draft" button. If you were 
to touch the time and
slowly drag your finger down along the right side of the phone you would find 
it, but you would also
find it if you touch the time in the middle and drag down or if you touch the 
carrier logo/signal
strength on the left and drag down as it goes all the way across.
Underneath that on the next line is "Cancel" at the left", "New Message or Message 
Subject" in the
middle and "Send" on the right.
If you touch the time and drag down past Minimize Draft you next get to Send.
If you want to swipe and are, for example, on Cancel, then you can swipe left 
once to get to the
Minimize Draft button, you can swipe right twice to get to Send.

Also, you can swipe backwards and it's just before the to field in which you 
have put the name of
the person or their email the one that you're sending the email to. Period.
