OK, using Siri, here is how I set up a haircut appointment starting tomorrow, 
Friday, September second at 1 PM, and the appointment will repeat every week.
I said:
Schedule haircut on Friday September 2 at 1 PM repeating weekly.

Now I always start out with the word schedule, then say the name of your 
appointment or event, then date and time, then if repeating, by what, weekly, 
Bi-monthly, monthly, etc.
Now this is not the only way you can say things to accomplish this, but I find 
this is what works best for me.
I know it might not sound like it makes sense when saying it this way, but 
again, I find Siri understands me better when I do it this way, and that is all 
that matters to me!
