I can't confirm about the remote buttons with the adapter, but I would hazard a guess and say they will work fine, there is no way Apple would break such important functionality. As for the audio quality I think it's comparible. I just bought a set of Lightning Earpods and tried both them and my old 3.5mm Earpods on my 6S Plus and I can't say I noticed a big difference. The new ones sounded a bit fuller, but as I said in another message, my old Earpods have been submerged a few times, afterwards they sound pretty tiny and then once they dry out they seem fine again, but I guess they aren't as new any more, either. I happened to see on the Apple Store app under Accessories and Headphones that there is a company called Audieze or something like that and they make some high-end Lightning earphones, here in Canada they range from $600 Canadian to over $1,000 Canadian, but I guess you have to compare Apples to Apples so to speak which means you would need a $600 or $800 3.5mm headset to compare to one of these high-end Lightning ones and maybe at that price point you would hear a difference. All in all I think with a $35 set of Earpods (in Canadian funds) you won't notice much of a difference between 3.5 and Lightning.
