Esther, Apple changed the way the native mail app works in iOS 10. Even with preview turned on in your settings, you'll need to touch the screen with 3 fingers to initiate a Voiceover preview of the email with focus. If you're using message threading and the thread with focus contains more than one message, you can single finger swipe until you hear expand thread and double tap and the messages in the thread will appear below it. Swiping right to each message in an expanded thread will result in Voiceover speaking your preview number of lines without the three finger touch previously mentioned.
I would think you should check Settings, Notifications to see what you have set for each app. I'm not sure about your music but I would start by going into iTunes with your 7 plus connected to your computer and making sure you have the music you want transferred to your device appropriately synced within iTunes.
