Push and hold for a moment on the track pad, this is equivalent to a double tap and hold on the iphone. I believe Voiceover announces something about pressing the Play/Pause button for options, that is the bottom button of the 3 buttons on the left side. Once you press Play/Pause you are asked if you want to delete the app, press the track pad again and it will be deleted. I'm not in front of my Apple TV right now, but that is more or less how it works.
