Emoji's are little icons or pictures like faces with different emotions, foods, symbols, flags, animals etc. If you don't want to use these you can go to Settings, General, Keyboards & delete the Emoji keyboard from the list of keyboards that you currently use. What you are hearing is that a word that you have typed has an emoji that can be used in place of the typed word.
