If you set a passcode you will be required to enter this passcode before an update can proceed and of course if you forget your passcode you will no longer have access to your phone. Keep in mind that if that happens Apple won't be able to help you, they can't recover a forgotten papsscode . In such a situation if you also have Find my iPhone turned on you wold have to log in to your Apple Id on a computer using the iCloud.com website, turn Find my iPhone off and then do a total reset of your phone.
