Hello It sounds like you have the direct touch typing option selected for text input on the keyboard. To change this back you will need Go to the settings app, general, Accessibility, and to VoiceOver. You will find an option in the settings called typing style. Open this section and there will be a few options in this section. It sounds like you are used to the standard typing mode so find that in the list and double tap on that setting. Now your keyboard should work like you are used to.
