I searched the discussion groups on Apples website. Unfortunately, the transcription feature is still in the beta phase & can not be turned off. I didn't beta test IOS 11, so I don't know if the feature will be able to be turned off. Gosh I sure hope so!! It is annoying & doesn't give any useful info only gibberish.
