You can only do an encrypted backup in iTunes and it backs up things like WiFi and app passwords and so on. At this point I think an iCloud backup is almost as good as an encrypted backup, but there might still be a few things the encrypted backup includes, not sure. Anyhow, in iTunes you just connect your phone, go to the phone area and in the summary tab which is selected bvy default tab until you find a checkbox that says "encrypt backup". You press the spacebar to check it and at the point you are asked to enter a password, then tab once and re-enter it and then press OK. The backup will start and it is encrypted from now on. What confused me in the beginning is that I thought you always had to turn on encrypted backup each time you do a backup, but once turned on and the password is set you can just choose File > Devices > Backup and the backup will be encrypted. Keep in mind though that you might go for years doing this without having to restore and then if you do want to use that backup for a restore it will ask you for the password you used when you first turned it on and if you don't know it then your backup is useless.

Backups have always confused me. If I do an ICloud backup on my phone or mini IPAD, it does not give me the options to encrypt. Do I need to do it on my computer and if so, how do I do it?

Encrypted backups save your HealthKit and password data, while unencrypted ones don't. iCloud backups also save this data, which they didn't used to do, so so they are now equivalent. However, either an iCloud or encrypted backup is better than an unencrypted backup.

I highly recommend you go to www.applevis.com, find the iOS 11
article (I just thought I try Jaws Find and searched for iOS 11 and
this put me right on it) and read that article.
After I did this I decided to upgrade since there are some braille
related bugs which don't concern me since I use neither braille input
nor do I have a braille display. There are also a few things which
mention Voiceover together with Zoom and this is also not a concern
for me. The rest I think I can live with until Apple fixes it.
I did my usual preparation:
1. Check to see if there are any updates, there were two and one
mentioned iOS 11 compatibility so it's always a good idea to make
sure all your apps are up to date especially before a major update.
2. Connect to my laptop, open iTunes and do a sync and then an
encrypted backup.
3. I then went to Settings > General > Reset and tapped Reset Network
Settings. After the phone rebooted I renamed it again to what I
wanted and reconnected to my WiFi.

I now tried to update via iTunes, but everyt time I clicked "Check
for Updates", iTunes said it could not contact the update server and
all I could do is press OK.
I then went to Settings > General > Software Update on my iPhone. The
iOS
11 update was there instantly. I have a 6S Plus and it said the
update was 2.04 Gb and I tapped on Download and Install.
After agreeing to the license terms it sat there for a few seconds
saying requesting update, then it started the download maybe 20
seconds before the clock on my PC jumped to 12:45 PM.
I guess it's nice to have a fibre connection with 125 Mb download as
the actual download was done in just over 3 minutes at 12:47.
The phone then restarted and just a few minutes ago, at 1:02 PM,
Voiceover came up and asked for my PIN, after I entered it I was
asked to also enter my Apple Id password and after a few seconds of
showing the message "Updating iCloud Settings" I had the message that
the update was successful and was at the "Get Started" button.
From start to finish it was basically 18 minutes and a bit over 3 of
those were for the download, about 14 for the install, very smooth
despite the fact that probably a lot of people are updating now.

I'll just point you all to what seghard (sorry about spelling) said
about ios 11.  update at your own risk and I'm sure the update
servers are overloaded currently if you can not update.  Just some
caushionary words I remember and plan to pay attention too as he is
onthe bata testing people.
