Hi, like the phone, the Apple watch only comes up talking when you press the Digital Crown three times if you haven't set it up yet or if you configure the Accessibility shortcut. You might be able to turn it on by asking Siri, though. This certainly works on regular watches, so I would think it would work on demo watches too.
