What african country or countries will you be visiting?
Here some general advice from somebody who has travelled quite a lot. I haven't 
been to Africa, but I have been to the Philippines quite a lot because my wife 
is from there and also to Thailand and Laos and in travelling there I have been 
through South Korea, China, Japan, Hong Kong and Singapore.

1. Insure your phone against theft, you should ask your home insurance, I could 
add my phone with a $100 deductable for a mere $35 or so a year and that covers 
loss, theft and damage.
2. Keep your phone out of sight in public as much as possible. Again, it may 
depend a bit on where you are going, but if you do go to countries where a lot 
of people are relatively poor an iPhone is a huge prize/incentive for theft.
3. As for using your phone, if it is unlocked you can buy a local SIM in 
whatever country you go to and put it into your phone. This will give you a 
local number and access to whatever prepaid plans are available. You probably 
will have more use for data than for calling and SMS so try to find a plan 
which gives you as much data as possible.
4. Don't expect very fast data speeds or even the greatest coverage, we take a 
lot for granted in our highly developed countries.

If you are going to South Africa maybe Fanus can chime in and give you some 
advice as to which carriers might have the best prepaid plans.
