The very first watch runs pretty slowly with the latest operating system, but I 
think all the other ones are fine.

You can arrange all your apps in an alphabetical list and scroll through it 
with the digital crown, the round button on the side of the watch. You can also 
ask Siri to open apps.

Yes, you can decide which watch faces you want to have access to and which 
items are on each face.

Mystic Access has a great Apple Watch audio tutorial, and National Braille 
Press will soon release a book on the subject as well. The manual isn't bad, 
and AppleVis has some good podcasts.
