Marie, You hit the nail on the head. When Siri gives you a list of web results and you double tap on one. There is a return to Siri button in the upper left, double tapping that brings you back to the Siri search results so you could pick a different result.

Now, I have been known to use dictation in the body of an Email. Once in the body of a reply or new Email, do the two-finger double tap and you'll hear a ding, then you can dictate for up to about 30 seconds before Siri will begin converting your speech to text. If you are done before that time, do another two-finger double tap to let it know you are done. That way, pausing isn't an issue.
