You hit the nail on the head.
When Siri gives you a list of web results and you double tap on one.
There is a return to Siri button in the upper left, double tapping that brings 
you back to the Siri search results so you could pick a different result.

I’m not sure if this happens all the time, but I have seen a “return to Siri”

AS for using Siri to compose Email, I don't use it unless the Email is one 
fairly short sentence.  Siri stops listening if you pause for a half a second...
Now, I have been known to use dictation in the body of an Email.  Once in the 
body of a reply or new Email, do the two-finger double tap and you'll hear a 
ding, then you can dictate for up to about 30 seconds before Siri will begin 
converting your speech to text.  If you are done before that time, do another 
two-finger double tap to let it know you are done.
That way, pausing isn't an issue.

Ask Siri to read text messages. You can ask to have my last text message read 
or read my unread text messages or read my text message from Sally.

Ask Siri to send an Email to someone.  Say, "Siri, send an email to Sue Jones." 
Siri will ask, "What do you want to say?" Dictate your message being careful 
not to pause until you have finished the entire message. Then Siri will read 
back the text and ask are you ready to send it? Say "Yes" or "No."

Ask Siri to read Emails.  Siri can read the unread emails, last email, or from 
a particular sender.

Ask Siri to create a calendar appointment.  Say, "Schedule an appointment 
titled Dr. Smith for January 6 at 2:00 pm." Siri will read back the appointment 
info and will ask if you want to schedule it; if you say, "yes," the 
appointment will appear on your calendar.  If you say "No," Siri will give you 
options to cancel or change parts of the appointment.

Ask Siri what appointments you have scheduled for a particular day or week.

Ask Siri to create a note.  The first line of a note will be the title of that 
note.  While dictating a note, speak the punctuation you want to use and if you 
want to make a list, say "new line."

Ask Siri to search notes.

Ask Siri to remind me to do something---example, take medicine at 7:00 am, take 
garbage out on Wednesday.
Remind me to call my daughter every Friday. Remind me to pay my bills on the 
first of the month.

Set reminders for locations: "When I get home, remind me to take out the trash."

Ask Siri to create any kind of list, such as a To Do List or a grocery list.  
You can add additional items to the list by asking Siri to "add eggs to my 
grocery list."

You can ask Siri to read the list.

Ask Siri to set an Alarm.  "Siri, set an alarm for 7:30 am." To stop the alarm 
from sounding press the power button or the home button.

Ask Siri to set a Timer. "Siri, set a timer for 15 minutes."

Ask Siri to cancel alarms or timers.

Ask Siri to get an Uber or Lyft ride, if you have the application installed on 
your device and you have an account.

Ask Siri to play music on your device, such as "Play the album Sergeant 
Pepper's Lonely Hearts Club Band."  Or, "Play the artist The Beatles."  Or, 
"play Classical music on my device."

Ask Siri for sports scores.

Ask Siri to search Google for anything.  The default search engine is Bing, if 
you want to use Google, ask Siri, "Search Google for the price of tea in China."

Ask Siri to open any app on your device.

Ask Siri to translate a phrase to another language.

Ask Siri to find out a store's hours.

Ask Siri to convert measurements, like how many tablespoons in a cup?

Ask Siri to Facetime someone.  Say, "Face time John Doe."

Ask Siri to solve math problems.  "Siri, what is 15% of $250."

Open specific settings.  "Siri, open Accessibility settings."

Ask Siri for walking directions or driving directions.

If your address is in contacts and you have selected your address under Siri-- 
my info, and you are out and about with someone and want directions to your 
home, say, "Siri, take me home."  You will be given turn by turn directions 
from your current location to your home. You can also specify walking 
directions.

Ask Siri, "What's the weather."

Ask Siri to turn on "Do not disturb."  All calls are then silenced.

If you are not sure what Siri can do, ask "What can I say?" and you will get a 
list of sample questions.

Say "Good bye," or "see you later."  This dismisses Siri.
