As for the charging it means you probably have nightstand mode on, turn this off in settings and make sure raise to wake is turned off and it will not do this. You can even turn off to wake it by turning the digital crown up, turn this off and tap to wake and it will only wake up if you actually press the digital crown.

However, with Watch OS 5, the watch will usually detect when you've started a workout if you forget to tell it ahead of time.
