Just to add to what Jennie said, you can also just turn off notifications to your watch for any individual app. You can do this in notifications in the Watch app on your phone. For any app that you do this, all notifications for that particular app will only come from your phone. For all apps that you have notifications turned on for both your phone and watch, then just as Jennie said, it all depends on whether your phone is locked. If your phone is locked, then those notifications will play a sound through your watch. When your phone is unlocked, then those notifications will play a sound through your phone.
Please know that you can access your notifications through the notification center on both your phone as well as on your watch no matter which one the sound came through. Hope this has been helpful.
