Congratulations for your new iPhone! I don't have a link to a tutorial but can answer your questions 1. To answer siri you have to tap the listen button. Generally the focus of VoiceOver is there by default so you can just try double tapping anywhere on the screen. You can also just press the home or the remote button. It is noteworthy that if you interact with siri when vo is off she automatically goes to listen mode after asking you something. Also, many have reported an issue with screen locking prematurely when interacting with siri via remote button and thus terminating conversation.
2. Unfortunately when siri sense something, other than her assurance that she will do so there is no conformation sound. Some hit the home button immediately after she says she's sending it and get to hear the usual sending sounds. I just have faith in her after having experimented with checking my send messages. In the list archives there is a post about a good blog entry about what you can say to her..
