It’s not so different from sending a text message to 2 or 3 recipients. Open 
the Facetime app, tap on “Add” and start typing the name of the first person, 
then when you find their name/number in the list (if you entered home, mobile 
and email for them in Contacts make sure to pick Mobile), double tap on the 
name. Now start typing the second name and double tap on it and so on. As you 
double tap each name it appears in a list underneath the edit field where  you 
type and below that is a button for Audio and Video, once you are done adding 
people just tap on either Audio or Video and the appropriate Facetime call is 
going to start.

Hi as the subject line says. I want to start a 3 way facetime audio call.

I am running the latest iOS 12.3.1.

I have never used this feature before, as i usually just do a one on one 
facetime audio call.
